Ingredients

  • 2 large cauliflower        
  • 3 tbs olive oil
  • 1 tsp ground turmeric
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp chilli flakes
  • 1 tsp ground fennel seeds
  • 1/2 tsp ground cinnamon
  • 1 tsp sea salt flakes, crushed
  • 1/2 cup roasted hazelnuts, roughly chopped
  • 80g marinated feta
  • 1 cup fresh herbs (like mint, flat leaf parsley and coriander)

 

Vinaigrette

  • 3 tbs extra virgin olive oil
  • 1 tbs apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 garlic clove, crushed
  • 1/2 tsp caster sugar

Method

  1. Cut the cauliflower into 3-4cm-thick steaks. Combine the oil, spices and salt in a bowl. Brush over both sides of the cauliflower.
  2. Preheat the BBQ on high then turn to medium ready to grill. Add the cauliflower, BBQ in batches for 5-7 minutes each side or until just tender and lightly charred. Remove to a platter, cover and stand for 10 minutes.
  3. Combine vinaigretteingredients in a bowl, season with salt and pepper and whisk well. Spoon over the cauliflower. Sprinkle with hazelnuts, feta and herbs and serve.
